Red wine cake with Dornfelder from the Palatinate

Red wine cake is a speciality from the Rhine and Moselle regions. Any red wine may be used, but a Dornfelder wine is a particularly good choice, thanks to its fruity flavour and dark red colour, which add a special touch to the cake.

Ingredients

  • 250g butter, room temperature
  • 300g sugar
  • 5 medium eggs
  • 1 sachet vanilla sugar
  • 1 tsp cinnamon (optional)
  • 1/4 litre Dornfelder wine
  • 1 sachet baking powder
  • 375g flour
  • 1 tbsp cocoa powder
  • 1 shot cognac (optional)
  • 150g chocolate sprinkles

Ingredients for the icing:

  • 8 tbsp icing sugar
  • 3 tbsp Dornfelder wine
  • Chocolate for icing

Preparation

  1. Pre-heat the oven to 175° C.
  2. Add the butter, vanilla sugar and sugar to a mixing bowl and mix.
  3. Continue mixing and add the eggs, wine, cognac, cocoa powder and cinnamon one by one.
  4. Sieve the flour into the mixing bowl and stir in the baking powder and chocolate sprinkles. Be careful not to over-mix!
  5. Grease a spring form cake tin and pour the mixture evenly into the tin.
  6. Bake the cake for 60-70 minutes or until a skewer inserted into the mixture comes out clean.
  7. Remove the cake from the tin and leave to cool.
  8. For the icing, mix the icing sugar with the red wine and pour it over the cake.
  9. Melt the chocolate and spread it on the edges of the cake.
